We sat down with Big Rub BBQ’s pit master, Jordan Poole, to get the who, whatwhere for the upcoming BITE NW Arkansas food festival.

We love our customers, of course, so we hope to see a lot of familiar faces along with potential new customers.

 

What is your ultimate goal for BRB at this year’s BITE?
Our goal is to promote our new food truck location. We also hope to reach new customers and provide BITE attendees with delicious barbecue.

 

Where did the idea for BRB originate?
We knew the business we wanted to be involved in, and we knew that we had good barbecue, so it all grew from there. It’s a progression – we are always trying to find new ideas and new ways to learn and grow.

 

Why is BRB participating in BITE?
It’s a great avenue to gain exposure and get invaluable feedback. It’s also a fun event that we all have a great time preparing for and being involved in.

People always note vibrant flavors when they try our food. Our strategy is pretty simple: we use high quality proteins that are slow smoked using recipes and experience gained over the years. We also use local bread and tortillas. This year, we’re planning to partner with Ozark Natural Breads. 

 

When can the public stop by the BRB booth at BITE?
Our booth will be open on June 22 and 23 from 6 to 9 p.m. at the 8th Street Market in Bentonville.
