3W Magazine was proud to host the back-to-school “Healthy Kiddos” Recipe Contest! A huge congratulations goes out to Laurie Marshall for her winning recipe that was simple, healthy, and definitely high on the “yummy factor”! Read her comments on her recipe below.

 

Griffin’s Chicken Salad

One large can white meat chicken (any brand will work)
3-5 Tablespoons Hellman’s mayo with olive oil – more mayo = more creamy!
1/2 cup celery, diced
1/2 cup green onion, diced (white & green parts – it’s all good)
salt & pepper to taste
Corn chips to dip

Put the chicken in a small mixing bowl and use a fork to shred the chunks.
Add the rest of the ingredients and stir. Done!

From Laurie: I’ve found that the canned chicken usually has plenty of flavor without having to add much salt at all. You could throw in some chopped grapes, cashews, diced Granny Smith apples, carrots, sunflower seeds, frozen (thawed) peas… go crazy! Make a “chicken salad bar” for kids and let them add in their favorite treats. We serve ours with corn chips, but of course crackers or pita bread or sandwich bread would work just as well.
